Abstract
SUMMARY
This research was conducted at the Laboratory of Fruit and Vegetables Facultad de Ciencias Zootécnicas at the Universidad Técnica de Manabí, the objective was to determine the incidence of two varieties of cocoa (Criollo and CCN51) in sensory and qualitative properties of chocolate ; used a design completely trifactorial chance and through a test of sensory analysis of hedonic seven-point scale applied to 30 untrained judges the results of which were entered into the system of statistical analysis SPSS where the ANOVA was conducted were obtained and determined statistical test by Tukey 5% significant difference exists in all treatments except the color , being the most widely accepted treatment T1 corresponding to chocolate made with 100% criollo cacao which was applied obtaining laboratory analysis of 2.77 % moisture and 46.89 % fat.

RESUMEN
La presente investigación se realizó en el Laboratorio de Lácteos de la Facultad de Ciencias Zootécnicas de la Universidad Técnica de Manabí, el objetivo fue determinar la incidencia de dos variedades de cacao (Criollo y CCN51) en las propiedades sensoriales y bromatológicas de chocolate; se utilizó un diseño completamente al azar trifactorial y mediante un test de análisis sensorial de escala hedónica de siete puntos aplicado a 30 jueces no entrenados se obtuvieron los resultados los cuales fueron ingresados al sistema de análisis estadístico SPSS donde se realizó el ANOVA, y se determinó mediante la prueba estadística de Tukey al 5% que existe diferencia significativa en todos los tratamientos excepto el color, siendo el tratamiento con mayor aceptación el T1 que corresponde a chocolate elaborado con 100% de cacao criollo al cual se le aplicó análisis de laboratorio obteniendo el 2,77% de humedad y 46,89% de grasa.
