dc.description El objetivo de esta investigación fue evaluar la estabilidad y conservación de un néctar a base de caimito (Pouteria caimito) con varios niveles de goma guar y mangostán (Garcinia mangostana). Se empleó un diseño completamente al azar (DCA) en arreglo bifactorial A*B. Factor A: Porcentajes de goma guar (0,2% y 0,4%); Factor B: Porcentaje de mangostán (2%, 4% y 6%), con seis tratamientos y tres repeticiones. Se evaluaron parámetros fisicoquímicos (acidez, °Brix y pH) y microbiológicos (recuento de coliformes, coliformes fecales, mohos y levaduras) en todos los tratamientos. La estabilidad se evaluó considerando los indicadores de la NTE INEN 2337 (2008): acidez, °Brix y pH, mediante análisis de regresión lineal. El análisis sensorial (ordenamiento por preferencia), fue realizado por un panel de 12 jueces no entrenados cuyos resultados se analizaron por medio de un análisis de varianza no paramétrico de Friedman. El procesamiento y análisis de datos se realizó en el software estadístico InfoStat. El análisis de varianza demostró diferencias significativas (p<0,05) entre los tratamientos con respecto a la acidez, sólidos solubles (°Brix) pH y viscosidad. Los resultados microbiológicos revelaron que todos los tratamientos cumplen con los límites mínimos establecidos en la NTE INEN 2337. El T1, T2 y T4 fueron los tratamientos que presentaron la mejor la estabilidad y conservación con relación al tiempo. El análisis sensorial demostró una mayor preferencia para el T4 y T6. La combinación de las gomas utilizadas influyó de manera positiva en la estabilidad del néctar a base de caimito cumpliendo parámetros fisicoquímicos y microbiológicos.
dc.description.abstract The objective of this research was to evaluate the stability and preservation of a star apple based nectar (Pouteria caimito) with various levels of guar gum and mangosteen (Garcinia mangostana). A completely randomized design (DCA) was used in a bifactorial A * B arrangement. Factor A: Percentages of guar gum (0.2 and 0.4%); Factor B: Percentage of mangosteen (2%, 4% and 6%), with six treatments and three repetitions. Physicochemical (acidity, °Brix and pH) and microbiological (coliform count, fecal coliform, mold and yeast count) were evaluated in all treatments. Stability was evaluated considering the indicators of the NTE INEN 2337 (2008): acidity, °Brix and pH, through linear regression analysis. Sensory analysis (ordering by preference) was performed by a panel of 12 untrained judges whose results were analyzed by means of a non-parametric Friedman analysis of variance. Data processing and analysis was performed in InfoStat statistical software. The analysis of variance showed significant differences (p <0.05) between the treatments with respect to acidity, soluble solids (°Brix), pH and viscosity. The microbiological results revealed that all the treatments comply with the minimum limits established in the NTE INEN 2337. T1, T2 and T4 were the treatments that presented the best stability and conservation in relation to time. Sensory analysis showed a higher preference for T4 and T6. The combination of the gums used had a positive influence on the stability of star apple-based nectar, complying with physicochemical and microbiological parameters.
