INCLUSIÓN DE HARINA DE SEMILLAS DE JACKFRUIT (Artocarpus heterophyllus Lam) COMO ESTABILIZANTE EN LA ELABORACIÓN DE UNA BEBIDA DE MARACUYÁ (Passiflora edulis)

Abstract
The research was developed with the objective of evaluating the stabilizing power of jackfruit seed flour (Artocarpus heterophyllus Lam) in a drink made from passion fruit (Passiflora edulis). A completely randomized experimental design was applied, three treatments were formulated with different concentrations of jackfruit seed flour (1%, 2% and 3%) plus a control treatment. A physicochemical, microbiological assessment was carried out on each of the treatments by applying the NTE INEN 2337. After that, a sensory panel was carried out in which the color, smell, taste and general appearance properties were evaluated. The results of the physicochemical and microbiological characterization of jackfruit flour are within those established in the Ecuadorian Technical Standard INEN 616:2006. A greater stability was obtained in the drink, reaching a sediment percentage of 16.82% (T3) and 6.69% (T0) up to the seventh day. The evaluation of the viscosity of the nectar reached a total of 120.50 Cp (T3) and 153.93 Cp (T0). For its part, the turbidity increased progressively as the flour concentration increased, reaching a total of 9846.67 NTU (T3). The microbiological characterization shows compliance with the microbiological requirements established in the NTE INEN 2337. The sensory evaluation shows significant differences between treatments, reaching a better acceptance in T2. The physicochemical stability of the treatments shows that the inclusion of jackfruit flour showed significant differences during days one and fourteen, reaching an average °Brix content of 16.34 (T3), acidity 0.49 and a pH of 3.26. (T1). The colorimetric evaluation resulted in an increase in the luminosity of the beverages as the concentration of the flour increased, reaching a value of 19.13 after 14 days, while in the coordinates a* and b* there was a decrease in treatment T3 with a mean of 3.53±1.05 (a*) and T2 with a mean of 12.77±3.37 (b*). It is concluded that the inclusion of jackfruit seed meal influenced the stability of the drink compared to the control treatment.

La investigación se desarrolló con el objetivo de evaluar el poder estabilizante de la harina de semillas jackfruit (Artocarpus heterophyllus Lam) en una bebida elaborada a base de maracuyá (Passiflora edulis). Se aplicó un diseño experimental completamente al azar, se formularon tres tratamientos con diferentes concentraciones de harina de semillas de jackfruit (1%, 2% y 3%) más un tratamiento testigo. A cada uno de los tratamientos se le efectuó una valoración fisicoquímica, microbiológica mediante la aplicación de la NTE INEN 2337. Posterior a ello se realizó un panel sensorial en la que se evaluaron las propiedades color, olor, sabor y apariencia general. Los resultados de la caracterización fisicoquímica y microbiológica de la harina de semillas de jackfruit se encuentran dentro de los establecidos en la Norma Técnica Ecuatoriana INEN 616:2006. Se obtuvo una mayor estabilidad en la bebida alcanzado hasta el séptimo día un porcentaje de sedimentos de 16,82% (T3) y 6,69 % (T0). La evaluación de la viscosidad de la bebida alcanzó un total de 120,50 Cp (T3) y 153,93 Cp (T0). Por su parte la turbidez aumentó progresivamente a conforme se elevó la concentración de harina alcanzando un total de 9846,67 NTU (T3). La caracterización microbiológica muestra el cumplimiento de los requisitos microbiológicos establecidos en la NTE INEN 2337. La evaluación sensorial muestra diferencias significativas entre tratamientos alcanzando una mejor aceptación en el T2. La estabilidad fisicoquímica de los tratamientos muestra que la inclusión de la harina de semillas de jackfruit mostró diferencias significativas durante los días uno y catorce alcanzando un contenido medio de °Brix de 16,34 (T3), acidez 0,49 y un pH de 3,26 (T1). La evaluación colorimétrica dió como resultado un aumento en la luminosidad de las bebida a conforme se aumentó la concentración de la harina alcanzado a los 14 días un valor de 19,13, en tanto que en las coordenada a* y b* se evidenció una disminución en el tratamiento T3 con media de 3,53±1,05 (a*) y T2 con una media de 12,77±3,37 (b*). Se concluye que la inclusión de harina de semillas de jackfruit influyó sobre la estabilidad de la bebida en comparación con el tratamiento control.
