Abstract
Currently, the consumption of Greek yogurt has increased since it has great nutritional properties and is beneficial for those who consume it, this product is the result of the fermentation of milk that helps digestion. The objective of this research is to evaluate the effect of three types of sweeteners (sucrose, honey, splenda) in arazá syrup with mango and incorporated into Greek yogurt. For this work, four treatments were applied, being the TC= the control treatment, T1= sweetened with sucrose, T2= sweetened with honey and T3= sweetened with splenda, to which physical chemical analysis was performed (protein, acidity and fat). and microbiological (E coli, Total Coliform and Recount of molds and yeasts) every 7 days; the organoleptic characteristics of a panel of 30 people were also analyzed and then analyzed in the statistical program SPSS using Duncan. The results obtained according to the bromatological analyzes show that the product is within the ranges according to the corresponding INEN, correspondingly, for the microbiological analyzes the absence of E coli and Coliform was detected, while fungi and yeasts were present, but in an accepted manner, while in the organoleptic analyzes there was no significant difference between their means. Coming to the conclusion that Greek yogurt with the addition of syrup is desirable by consumers since its flavor varies from the traditional. KEY WORDS: Fermented, concentrated, shelf life

En la actualidad el consumo del yogurt griego se ha incrementado ya que posee grandes propiedades nutricionales y beneficiosa para quien lo consume, este producto es el resultado de la fermentación de la leche que ayuda a la digestión. El objetivo de esta investigación es evaluar el efecto de tres tipos de edulcorantes (sacarosa, miel de abeja, splenda) en almíbar de arazá con mango e incorporado al yogurt griego. Para este trabajo se aplicó cuatro tratamientos siendo el TC= el tratamiento control, T1= edulcorado con sacarosa, T2= edulcorado con miel de abeja y T3= edulcorado con splenda a los cuales se le realizo análisis físico químico (proteína, acidez y grasa) y microbiológico (E coli, Coliforme totales y recuentro de mohos y levaduras) cada 7 días; también se analizó las características organolépticas a un panel de 30 personas para luego analizarlo en el programa estadístico SPSS utilizando Duncan. Los resultados obtenidos según los análisis bromatológicos demuestran que el producto se encuentra dentro de los rangos según la INEN correspondiente, para los análisis microbiológicos se detectó ausencia de E coli y Coliforme, mientras que los hongos y levaduras hubo presencia, pero de manera aceptada, mientras que en los análisis organolépticos no hubo diferencia significativa entre sus medias. Llegando a la conclusión que el yogurt griego con adición de almíbar es apetecible por los consumidores ya que su sabor vario a lo tradicional. PALABRAS CLAVE: Fermentado, concentrado, vida útil.
