Abstract
Energy bars are a food source with a high nutritional power of great interest in people's daily diet. The research was developed with the objective of evaluating the influence of amaranth (Amaranthusspp) and mango jelly (Mangifera indica) on the bromatological, physicochemical and sensory composition of an energy bar. A completely randomized block design was used with a total of four treatments with three replicates for each of them. Mango jelly was standardized at 15% and three concentrations of amaranth flour (20, 30 and 40%) were added. A physicochemical (pH, % acidity), microbiological (Determination of Coliforms NMP/cm3, Determination of Fecal Coliforms NMP/cm3, Standard count on the REP plate CFU/cm, Count of molds UP) was carried out on each of the treatments. /cm3, UP yeast count/cm3), bromatological (Moisture (%), Ash (%), Fiber (%), Protein (%), Fat (%), Energy (cal/100g), and sensory (Color, smell, taste, texture and general appearance).For the statistical analyses, the INFOSTAT statistical program was used, with a 95% confidence interval. The results of the physicochemical parameters show that the acidity values increased as the concentration increased. of amaranth flour and while the pH decreased, while the microbiologica l requirements were found within the parameters described in the NTE INEN 2595. The microbiological analyzes show the best results in T3 with the highest energy content of 4112, 28 Kcal.kg1. The Evaluation sensory was better in treatment T3 with ratings from 4.10 to 4.30. Las barras energéticas son una fuente de alimento con una alto potencia nutricional de gran interés en la dieta diaria de las personas. La investigación se desarrolló con el objetivo de evaluar la influencia del amaranto (Amaranthus spp) y jalea de mango (Mangifera indica) sobre la composición bromatológica, fisicoquímica y sensorial de una barra energética. Se utilizó un diseño en bloques completamente al azar con un total de cuatro tratamientos con tres réplicas por cada uno de ellos. La jalea de mango se estandarizó al 15% y se añadió tres concentraciones de harina de amaranto (20, 30 y 40%). A cada uno de los tratamientos se le efectuó una valoración fisicoquímica (pH, %acidez), microbiológica (Determinación de Coliformes NMP/cm3, Determinación de Coliformes Fecales NMP/cm3, Recuento estándar en la placa REP UFC/cm, Recuento de mohos UP/cm3, Recuento de levaduras UP/cm3), bromatológica (Humedad (%), Ceniza (%), Fibra (%), Proteína (%), Grasa (%), Energía (cal/100g), y sensorial (Color, olor, sabor, textura y apariencia general). Para los análisis estadísticos se utilizó el programa estadístico INFOSTAT, con un intervalo de confianza del 95%. Los resultados de los parámetros de fisicoquímicos muestran que los valores de acidez aumentaron a conforme se aumentó la concentración de harina de amaranto y en tanto que el pH disminuyó, en tanto que los requisitos microbiológicos se encontraron dentro de los parámetros descritos en la NTE INEN 2595. Los análisis microbiológicos muestran los mejores resultados en el T3 con el mayor contenido de energía de 4112,28 Kcal.kg1 . La evaluación sensorial fue mejor en el tratamiento T3 con valoraciones de 4,10 a 4,30. Palabras claves: amaranto, barras energéticas, jalea.
