Abstract
The Shrimp (Litopenaeus vannamei) in Ecuador, in addition to being a product with an important participation in the country's economy as a result of its export, is also considerably desired by the palate of its consumers. The objective of the work was to evaluate the physico-chemical, sensory and shelf life properties of a shrimp snack (Litopenaeus vannamei). A Completely Random Design (DCA) was used with an AxB factorial arrangement with 3 replicates for each treatment, where factor A corresponded to three levels of drying temperatures and factor B to two levels of drying times. The treatments were evaluated sensorily (smell, color, taste and texture) by means of a 9-point hedonic test by a panel of thirty untrained judges and through instrumental analysis the texture parameter was evaluated; In addition, in the treatment of greater acceptance, the physico-chemical properties were analyzed and the shelf life was determined. The data obtained was processed with Microsoft Excel 2016 and Minitab 19.1.1.0. The results showed that the T6 treatment (110 °C/150 min.) obtained greater acceptance in the evaluation of the sensory profile with <45% humidity, 1.53% fat and 45.47% total protein. The microbiological analysis showed inhibition throughout the period of analysis of E. coli and Salmonella, being within the limit permissible by INEN 456 (2013), however, from the second evaluation at 8 days, CFU/g Aerobe count values were identified, exceeding the values established by the standard, demonstrating that the temperature and time of T6 are not sufficient to guarantee the stability of the product at the microbiological level.

El camarón (Litopenaeus vannamei) en el Ecuador además de ser un producto con una importante participación en la economía del país a consecuencia de su exportación, también es considerablemente apetecido por el paladar de sus consumidores. El objetivo del trabajo fue evaluar las propiedades físico-química, sensorial y vida de anaquel de un snack de camarón (Litopenaeus vannamei). Se empleó un Diseño Completamente al Azar (DCA) con un arreglo factorial AxB con 3 réplicas por cada tratamiento, donde el factor A correspondía a tres niveles de temperaturas de secado y el factor B a dos niveles de tiempos de secado. Los tratamientos fueron evaluados sensorialmente (olor, color sabor y textura) mediante de una prueba hedónica de 9 puntos por un panel de treinta jueces no entrenados y mediante análisis instrumental se evaluó el parámetro textura; Además, en el tratamiento de mayor aceptación se analizaron las propiedades físico-químicas y se determinó la vida útil. Los datos obtenidos se procesaron con Microsoft Excel 2016 y Minitab 19.1.1.0. Los resultados evidenciaron que el tratamiento T6 (110 °C/150 min.) obtuvo mayor aceptación en la evaluación del perfil sensorial con <45% de humedad, 1,53 % materia grasa y 45,47 % proteína total. El análisis microbiológico evidenció inhibición durante todo el periodo de análisis de E. coli y Salmonella, encontrándose dentro del límite permisible por la INEN 456 (2013), no obstante, a partir de la segunda evaluación a los 8 días se identificaron valores de recuento de Aerobios UFC/g superando los valores establecidos por la norma, demostrando que la temperatura y tiempo del T6 no son suficiente para garantizar la estabilidad del producto a nivel microbiológico.
