Abstract
SUMMARY This research was conducted at the Laboratory of Agricultural Industries Engineering of Zootechnical Sciences Faculty- Chone, Technical University of Manabí, the objective was to analyze the impact of the use of papain and bromelain in the organoleptic and qualitative characteristics of smoked pork chops, a design was used completely randomized 0.05 confidence level (P≤0.05) with a 2x2 factorial arrangement using 2 different enzymes: papain and bromelain at 2 concentrations: 1.0 and 0.5 g of enzyme per 100 g of pork chop and a control without enzyme. The best treatment was determined by the SAS (Statistical Analysis Software) software, version 9.1 using ANOVA (analysis of variance) and Duncan mean separation. A sensory analysis hedonic scale of 5 points to 30 students of the Agricultural Industries career, it was applied to determine the most accepted product, resulting as best treatment T1 (Bromelain 1%)

RESUMEN La presente investigación se realizó en los Laboratorios de Ingeniería en Industrias Agropecuarias de la Facultad de Ciencias Zootécnicas, extensión Chone de la Universidad Técnica de Manabí, cuyo objetivo fue analizar la incidencia del uso de papaína y bromelina en las características organolépticas y bromatológicas de chuletas de cerdo ahumadas, se aplicó un diseño completamente al azar al 0.05 de nivel de confianza (P≤0.05) con un arreglo factorial de 2x2 utilizando 2 enzimas diferentes: papaína y bromelina en 2 concentraciones: 1.0 y 0.5 g de enzima por cada 100 g de chuleta de cerdo y un control sin enzima. Se determinó el mejor tratamiento mediante el programa SAS (Statistical Analysis Software), versión 9.1 por medio de un ANDEVA (Análisis de varianza) y una separación de medias DUNCAN. Se aplicó un análisis sensorial con escala hedónica de 5 puntos a 30 estudiantes de la carrera de Industrias Agropecuarias, para determinar el producto de mayor aceptación, resultando como mejor tratamiento el T1 (Bromelina 1%).
