dc.description El mucílago de cacao se caracteriza por su alta presencia de carbohidratos, minerales y vitaminas que puede ser aprovechado en la industria de los alimentos. La investigación tuvo como objetivo evaluar el efecto del mucílago de cacao (Teobroma cacao l) en la gasificación de una cerveza artesanal. Se utilizó un Diseño Factorial Completamente al Azar con tres tratamientos y un tratamiento control con tres réplicas cada uno. Se obtuvo el mucílago de cacao evitando en lo posible la contaminación microbiana. Una vez obtenido el mucílago de cacao se pasteurizó y se conservó hasta su posterior uso al momento de generar la gasificación de la cerveza. Se procedió a elaborar la cerveza durante un periodo de quince días, una vez culminado este periodo se hicieron tres concentraciones del mucílago de cacao 25%, 50% y 75%. A cada uno de los parámetros se evaluó la producción de carbonatación (CO2), análisis sensorial (color, olor, sabor, textura y apariencia general), fisicoquímicos (Contenido alcohólico, pH, acidez y densidad), química (Arsénico, ceniza, cobre, hierro, plomo y zinc) y microbiológica (Anaeroios mesófilos, mohos y levaduras). Los resultados de la producción de CO2 no presentaron efectos significativos (p>0,05) para cada uno de los tratamientos en estudio. Los resultados de la evaluación sensorial no fueron estadísticamente diferentes (p>0,05) entre tratamientos. Los resultados fisicoquímicos dieron diferencias significativas (p<0,05) en los parámetros pH y % de acidez, en tanto que el contenido de alcohol y densidad fueron similares para cada uno de tratamientos. De la misma manera la evaluación química y microbiológica cumplió con los requisitos descritos por la norma a excepción de las levaduras. Los resultados se encontraron dentro de los requisitos de la NTE INEN 2266 y muestran que la utilización del mucilago de cacao fue viable para la elaboración de cervezas artesanales. dc.description.abstract Cocoa mucilage is characterized by its high presence of carbohydrates, minerals and vitamins that can be used in the food industry. The objective of the research was to evaluate the effect of cocoa mucilage (Theobroma cacao l) in the gasification of a craft beer. A completely randomized factorial design was used with three treatments and a control treatment with three replicates each. Cocoa mucilage was obtained avoiding microbial contamination as much as possible. Once the cocoa mucilage was obtained, it was pasteurized and stored until later use when generating the gasification of the beer. The beer was brewed for a period of fifteen days, once this period was over, three concentrations of cocoa mucilage 25%, 50% and 75% were made. Carbonation production (CO2), sensory analysis (color, smell, taste, texture and general appearance), physicochemical (alcoholic content, pH, acidity and density), chemical (arsenic, ash, copper, iron, lead and zinc) and microbiological (mesophilic Anaeroios, molds and yeasts). The results of CO2 production did not show significant effects (p>0.05) for each of the treatments under study. Sensory evaluation results were not statistically different (p>0.05) between treatments. The physicochemical results gave significant differences (p<0.05) in the pH and % acidity parameters, while the alcohol content and density were similar for each of the treatments. In the same way, the chemical and microbiological evaluation complied with the requirements described by the standard, except for yeasts. The results were found within the requirements of the NTE INEN 2266 and show that the use of cocoa mucilage was viable for the production of craft beers.
