Abstract
The present study was carried out with the objective of evaluating the bromatological quality and shelf life of a pumpkin and pineapple-based milk drink. Three treatments with three repetitions were carried out. The experimental design was completely randomized, carried out in the statistical program Infostat, determining the analysis of variance ANOVA and its comparisons using the Tukey test. The results of the physicochemical analyzes (density, viscosity, protein and fat) obtained significant differences in all the treatments and the microbiological analyzes (mesophilic, coliforms, listeria monocytogenes and escherichia coli) did not obtain a microbial load that degraded the milk drink, fulfilling the requirements of the Ecuadorian Technical Standard INEN 2564; the sensory analysis (smell, flavor, color, texture and general appearance) through non-parametric analysis of variance showed significant differences in the variables except for color, obtaining T2 (30% pumpkin and 10% pineapple) as the best treatment of the study ; the bromatological composition made to the best treatment (T2) gave results of protein content of 2.24%, total solids of 21.23%, fiber of 0.09%, fat of 1.15%, ash of 0.48% , 78.77% water, 17.27% carbohydrates and 84.07 calories; The physicochemical analyzes carried out at T2 every 7 days for 21 days to measure the shelf life of the dairy drink, gave as results that the pH and brix degrees have a very significant decrease in their evaluation days, which makes it a drink that It can have a shelf life of up to 21 days stored at 4ºC. El presente estudio se realizó con el objetivo de evaluar la calidad bromatológica y tiempo de vida útil de una bebida láctea a base de zapallo y piña. Se realizó tres tratamientos con tres repeticiones. El diseño experimental fue completamente al azar, realizado en el programa estadístico Infostat, determinando el análisis de varianza ANOVA y sus comparaciones mediante la prueba de Tukey. Los resultados de los análisis fisicoquímicos (Densidad, viscosidad, proteína y grasa) obtuvieron diferencias significativas en todos los tratamientos y los análisis microbiológicos (mesófilos, coliformes, listeria monocytogenes y escherichia coli) no obtuvieron carga microbiana que degradara a la bebida láctea, cumpliendo con los requisitos de la Norma Técnica Ecuatoriana INEN 2564; el análisis sensorial (olor, sabor, color, textura y apariencia general) mediante análisis de varianza no paramétrico arrojaron diferencias significativas en las variables a excepción del color, obteniendo al T2 (30% zapallo y 10% piña) como el mejor tratamiento del estudio; la composición bromatológica realizada al mejor tratamiento (T2) dio resultados del contenido de proteína de 2,24%, sólidos totales de 21,23%, fibra de 0,09%, grasa de 1,15%, ceniza de 0,48%, agua de 78,77%, carbohidratos de 17,27% y 84,07 calorías; los análisis fisicoquímicos realizados al T2 cada 7 días por 21 días para medir la vida útil de la bebida láctea, dieron como resultados que el pH y grados brix tienen una disminución muy significativa en sus días de evaluación, lo cual la convierte en una bebida que puede tener un tiempo de vida útil hasta 21 días almacenada a 4ºC.
