Item“Efecto Anti Adipogénico y Anti Aterosclerótico del Extracto de Maíz Morado (Zea mays) como Aditivo en la Alimentación de Pollos Parrilleros”.(Facultad de Ciencias Veterinarias > Carrera de Medicina Veterinaria, 2019) Sancán Dumes, María Gabriela ; Saltos Loor, Dalisi RoxanaWas evaluated the supplementation of three levels an extract of purple corn (EMM) on the anti-adipogenic and anti-atherosclerotic effect and the productive behavior in broiler chickens. The experiment was carried out in the Department of Animal Production and Agricultural Laboratories of the Technical University of Manabí.Two hundred 28-day-old COBB 500 chickens, fed ad libitum with an isocaloric and isoproteic diet, were randomly distributed in control treatments (T1, 0% EMM) and supplemented with 0.05% (T2); 0.15% (T3) and 0.75% (T4) of EMM. Reached 56 days of age, ten male chickens per treatment were slaughtered. The productive performance of the birds was evaluated: final weight, weight and yield in carcass, relative weight of abdominal fat, liver and heart. The lipid profile was evaluated by spectrophotometry; the atherogenic risk using the ratio CT / HDLc and LDLc / HDLC and TG / HDL and hepatic steatosis by histopathological analysis. The results were analyzed by means of one-way ANOVA and Tukey's means test, except for hepatic steatosis (two proportions test: control treatments and supplemented with EMM). The final weight was higher in treatments T3 and T4 (p = 0.045) compared to T1, while carcass weight, carcass yield and relative weight of organs and the serum concentration of triacylglycerol (TAG), total cholesterol (TC), and low and high density lipoproteins (LDLc and HDLc) were similar between treatments (p> 0.05).The CT / HDLc index was lower in T3 and T4 (p = 0.014), while LDLc / HDLc was higher in T1 (p <0.002), no significant differences were observed for the TAG / CT index. The proportion of hepatic steatosis was lower when supplemented with EMM.The T4 treatment showed a higher proportion of ether extract in muscle tissue. It is concluded that EMM exerts a protective effect against atherogenic risk and hepatic steatosis without affecting the productive performance of broilers. Key words: Anthocyanin, atherosclerosis, hepatic steatosis, purple corn extract, flavonoids, lipid metabolism.
